Kale Is At Its Most Toothsome Right Now - Check These Recipes

Kale BenefitsThis is the best time to eat kale... after the first frost.  It is suddenly jammed with its own rich almost salty flavor, quite different from its earlier wan and bland cousins (kale harvested before the first frost).

Benefits of Kale

Kale is great for helping to clear out the numerous Thanksgiving foods that may still be lingering and giving us that bloated feeling.Being a dark green cruciferous vegetable, it is loaded with flavonoids for anti-inflammatory and anti-oxidant effects.  It's also high in vitamins A, C and K, carotenoids and fiber.Research has shown kale to have risk-lowering benefits for at least five types of cancer:  breast, colon, ovary, prostate and bladder.

Dr. Eve's Tasty Kale Recipe

For 4 people, wash two medium bunches of kale - they cook down a lot.  Cut off the bottom of the stems and chop the rest into 2-3 inch bits and sauté in 1 TBSP. of butter and 2 TBSPs of sesame oil.Lately, I've been adding a few sun-dried tomatoes that I've marinated myself in chopped garlic and olive oil.  Then I serve the lot with either a baked potato or jasmine rice, or any other you like.Me mum, in Germany, used to cook it (after the first couple of frosts, of course) in chopped slabs of bacon.  But I'm a bit off piggies at the moment... Let us know what you think (in the comment section below).For another way to enjoy kale, try this:  After washing and chopping it into  2-3 inch pieces, throw them on top of veggies that you are already roasting in the oven (just for the last 10 minutes or so).  Add a little sea salt and/or pepper and you've got some very tasty Kale Chips.

The Thanksgiving Dinner Aftermath

Waking Up the Immune System Now, Today

The Immune System - Thymus, Spleen, Bone Marrow & Lymph Nodes

There are three main reasons I, personally, am bolstering my immune system right now:

  1. Yours truly turns 69 this week, and I have no immediate plans for the cancers to return that I had at 25.
  2. David and I are volunteering at the local elementary school, helping kids learn to read and, Oh Boy!, are they generous little souls with those virulent schoolyard germs they so gustily and lovingly bestow upon us.
  3. Lastly, there is gravity exerting its pull – but you know what? That was just a rather unlovely picture that came to mind – I think I’ll not write to you about that after all.  Suffice it to say, that it exerts its pull on our immune system (thymus, spleen, bone marrow, lymph nodes) too.
